Quite a few years back my husband took me to visit his relatives in Sicily. They live in a little town called Fiumefreddo and the time we spent there is something I will always remember and treasure.We were taken around to his Uncle’s and Aunty’s homes and everyone had something delicious for us to eat. “Mangaire Mangaire!” my husband’s Aunties would say when we tried to say we had eaten enough. I was lucky enough to be given the recipe to one of the cakes I enjoyed while I was at Uncle Pippo’s house. And now I will share it with you.

Recipe

Ingredients

• 400 grams of Fine Flour (Farina)

• 200 grams sugar (1 Cup)

• 150 grams unsalted butter

• 3 eggs separated

• 1 small glass of milk (about 3/4 cup)

• 150 grams chocolate chips

• 1 teaspoon of baking soda and a pinch of salt

 

If you decide to dribble chocolate icing on your cake

2 tablespoons on butter melted

1 cup of icing sugar

1/2 cup of good cocoa

enough hot water to bring it to the consistency you like.

Just use a spoon to dribble this mixture over the cake


Method

This is as it was written for me..Mix the yellow of the eggs with sugar and melted butter.Then add sifted flour, salt and baking powder. Mix well.In a glass bowl beat the egg white until it is like snow. Cover chocolate chips in flour so they don’t sink to the bottom of the cake. Combine the beaten egg white with rest of mixture and chocolate chips and milk. Fold through until well mixed. Put in a greased ring tin and bake at 180 degrees for 30 mins or until golden brown
