This isn’t rocket science! I like to try and make vegetables for my family as often as possible and when I prepare them this way, everyone seems to enjoy them. All you do is pick some nice fresh, in season vegetables and peel them, then cut them into interesting pieces. If there are some like carrots that take a little longer to cook, give them a few minutes in the oven first and then add the rest. I put them in a big earthenware dish and sprinkle lemon olive oil and salt and pepper on them and roast them at 170 degrees until they are cooked but still a little bit crunchy. Before serving them I chop Parsley and Basil and scatter over the top. I hope your family enjoys them too.
