On my last trip to the local market, I was a little over zealous in my ordering, and ended up with far too many figs!
I can’t waste these beautiful purple fruit, so I made fig and ginger jam. So easy and what a treat to have such an exotic jam in the mornings. I have included the recipe in case this happens to you after a trip to your produce market.
- 3 1/2 cups sugar
- 1 tablespoon candied ginger
- 750 grams fresh figs, rinsed

In a food processor place sugar, and ginger process The sugar will become somewhat powdered. Place into a large heavy bottom pot.
Place the figs and lemon juice and zest into the processor and pulse 5 to 6 times just to a coarse chop. Add to pot with sugar.
Heating to a slow boil then raise heat to a fast rolling boil for 15 minutes stirring most the time. At this point you`ll see the juice turn vibrant dark red and it is pretty syrupy.
Spoon into sterilized jars.
Process for 10 minutes in a hot water bath.
