With Christmas fast approaching I thought I would try and make something you could give away to teachers and friends. We have all tried White Christmas before, but I have always found it a bit too sweet. ( I can’t believe I just typed that! I am a sugar addict) Anyway I have added more roasted nuts and replaced the red cherries with red cranberries. The result is delicious and I am sure people will appreciate you making this for them.
To roast the nuts all you do is heat the oven to 170 degrees and then put the nuts in for around five minutes.
- 250g white chocolate melts
- 100g copha
- 1 1/2 cups rice bubbles
- 100g dried cranberries
- 100g roasted pistachios
- 100g roasted hazelnuts
- 1 cup (90g) desiccated coconut
- 1 teaspoon vanilla extract
- Step 1
Line a 30cm x 20cm (base) baking pan with baking paper. Melt the chocolate and copha in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Mix the dry ingredients together and then fold in the white chocolate and copha. Pour mixture into the prepared pan, pressing down with a large metal spoon. Refrigerate for 4 hours or until set.

Turn slice on to a chopping board. Using a knife that has been dipped in hot water, cut into squares. Serve.
