We decided to take a drive to Melbourne since we were already half way there. I have visited Melbourne many times, as my husband grew up there and many of his relatives still live there. The present building was erected in 1891 as the head office of Victoria’s railways. In 1985, the transport ministry moved and the grand old building was in limbo until it was converted into a hotel in 1998. We stayed in a one bedroom studio and enjoyed sleeping on a lovely soft bed that was on a mezzanine overlooking the living room and kitchen.
One of the really pleasant surprises was how amazing the breakfast was. You order from the menu and there are lots of great choices. We tried the Granola with Greek Yoghurt and Seasonal Fruit and Smashed Avocado and Sour Dough Taost with Feta and Oven-candied Cherry Tomatoes one morning which was so delicious. They also have great coffee and one of my favourites Lemon and Ricotta Pancakes with Yoghurt and Mixed Berry Compote.
This came with candied walnuts which I have given you the recipe before as they are such a great treat to have in the cupboard and serve as an extra in lots of dishes.
I am including the recipe for the Lemon Ricotta Pancakes below in case, like me you would like to serve them for breakfast at your place.
1 1/4 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup ricotta cheese
1 large egg
2 large egg whites
1/2 cup fresh lemon juice
1 teaspoon on vanilla
2 teaspoons grated lemon zest
1 tablespoon canola oil
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
2. In a medium bowl, whisk together ricotta cheese, egg, egg whites, lemon juice, lemon zest, and canola oil. Gently fold this mixture into the dry ingredients until flour disappears. Don’t over mix. The batter will be thick.
3. Heat a nonstick frypan over medium heat. Spray with cooking spray. Drop about 1/3 cup of batter onto the hot griddle or skillet. Cook the pancakes until browned on the underside and beginning to set, about 2 minutes. Flip and cook the pancakes on the other side, about two minutes longer. Continue making pancakes until batter is gone. Serve warm with a fruit compote and plain yoghurt as Grand Hotel Melbourne did.
