Sometimes I purchase an ingredient and really have NO idea what I am going to do with it. On one such occasion I bought around 500g of candied orange peel. I think I had some idea of making a Christmas cake or something. Anyway a few months later I’m cleaning out the pantry and came across the candied orange peel. I decided I would be inventive and use the peel in a few recipes. I added them to my brownie recipe and they turned into Choc/Orange Brownies. Really surprisingly delicious. The trick is to cook the orange peel with the butter and chocolate so that the flavour becomes infused and the pieces of peel aren’t so chewy.

Next I decided to add the peel to a choc chip cookie recipe and they also worked out really well and here is the recipe for you to try.


125 g unsalted butter at room temperature

1/2 teaspoon of vanilla

1 cup of brown sugar

2 eggs

2 cups of plain flour, sifted

1 teaspoon of baking powder

1 cup of desiccated coconut

185 grams of dark chocolate chips

1 cup of candied orange peel



Preheat the oven to 190 degrees C. Line two cookie trays with baking paper. Then place butter, vanilla and sugar in a bowl and beat until creamy. Beat in the eggs next and then add the candied orange peel. Lastly add the flour, baking powder, coconut and dark chocolate chips.

Roll tablespoons of the mixture into balls and place on the lined baking trays. Allow room for some spreading.

Bake for 10-12 minutes or until lightly browned and then let cool on a flat surface.
